      Appetizers or side dish – dipped or just eat it as it comes out of the fryer

      Couple of things you need to watch
      – oil temperature needs to be over 300 F no more than 375 F
      – don’t overcrowd the fryer it drops the oil temp too much, using HF digital IR sensor to check mine
      – easier with smaller cut veggies (julian) – I store mine in water bath to keep from turning color
      – keep the batter a little thicker and dry the veggies before putting them in the batter
      – I seem to do better with a mixture of rice flour and chickpea flour with a touch of Bicarb of soda
      to get more crispy raised crust.
      – I seem to need a timer to know when to turn them over in the oil, 3-4 min each side depending upon the size
