Wow! What an interesting combo! I’m going to have to try this. I’ve got no green thumb, but I’m sure I can barter with somebody for some fresh zucchini.
Kind of a staple in NM and southern Colorado. I usually use chopped fresh jalapenos that have been seeded and stemmed in lieu of green chiles, and no cheese. Don’t have to use corn either as sauteed squash is quite good by itself. You can throw in diced tomatoes if you like. And, if you use bacon drippin’s instead of olive oil … well, everyone to their own.
